Maryland Crabcake Tostadas

Sometimes, my son is hungry and I need to make him some food fast! He is a hungry teenager who is 15 years old.

This was simple but oh so divine!

I smeared the bottom of the tortilla with four cheese rosa sauce,smeared maryland crabcakes on top,added plum tomatoes,parsley,Cheddar cheese,Monterey Jack cheese,Queso Quesadilla and Asadero cheese.

I popped them in the oven at 350 degrees (pre-heated), and baked them until the cheese melted,and it was crispy!. ☺

Maryland Crabcake Tostadas…cut them in 4 pieces. They are great as an appetizer or for any gathering!

Shrimps & Proscuitto tossed with Rice Noodles

Honestly, I need to make more time to get on my site. I have been trying to find myself again ever since my mom passed away. I think I am discovering many things now. Tonight,I had tiger shrimps on hand,some proscuitto,and roma tomatoes. I wanted something light..

I seasoned my shrimps with garlic and herbs and sauteed them in some EVOO.

I then added proscuitto to get crispy together with garlic,diced shallots,and diced roma tomatoes…I then brought back the shrimp to the pot and stirred it together with some fresh cilantro,lemon,and chardonnay.

I boiled hot water and let the rice noodles stand for 8-10 minutes in the water. I drained the noodles and combined it all.

It was superb and quite simple really. Don’t complicate it,keep it simple. 🙂

Good day my friends!

I made this dish a couple of days ago because I was truly craving some fresh seafood. Sometimes I love to go out and have it…but I love to make it myself. I dredged the filets in a breading I love ..(Louisiana Fish Fry). I seasoned them with tropical seasonings prior to breading them. Fry the filets until golden brown and squeeze some lime juice on them. I made my favorite jasmine rice with lime…and homemade black beans. This is simple…quick…and one of my favorite dishes to eat.

I am reminded of the times my father used to take me to Bahamas Restaurant…He got me addicted to fresh oysters and conch fritters! Frituritas de cobo y una bandeja con hielo y ostiones! To this day I still eat it…thanks dad…for letting me explore so many things with you.

Happy Labor Day weekend to everyone! It has been raining all weekend long.

I have been quite busy in the kitchen these past few weeks,and to be honest,I have not taken a moment to share a few of my creations. I apologize for that.

This dish right here is quite refreshing and simple. I have grilled corvina with a colorful salsa tossed with peaches,pineapple, and pears. I love some heat,so I diced half of a small jalapeño for the extra kick. To finish it off, I served it with coconut rice. A bit tropical,but I loved it! Stay tuned,I am going to be posting a few more. 😊

Wild Salmon👌

I made this a few days ago.

My nights become busy at times, and truly, I  do not have time to post my creations. Buttttt I am here once again. Don’t you think it is a beautiful thing to inspire? 🙂

On this evening, I came up with grilled wild salmon, organic couscous,and baby Bella mushrooms with Marsala sauce. Salmon has plenty of Omega-3,and is quite filling. Once it is plated, I squeezed some lemon right on top. Just because- ©I felt like it. Get in the kitchen and get to cooking! 🙌😎

Snapper!

I recently had surgery, and although the doctor told me to relax and take it easy, I couldn’t. Cooking is my therapy, and it makes me content. On this day, I decided to make snapper filet with garlic, lemon, fennel, and artisan onions. I layed it over a bed of thyme infused farro, topped with fresh mango salsa.

Life is good. 🙂

This will always be a reminder of my father. It was one of his favorites. I remember asking him to give me his recipe a few months before he passed away.

This delicious “Ceviche De Ponce”  which I have re-created in his honor is full of lime,onions,cilantro,red snapper,habanero,and secret ingredients that will always remain a secret. .right Dad?
